Melanzani waschen, der Länge nach in etwa 5mm dicke Scheiben schneiden, auf ein mit Salz bestreutes Backblech legen und 30 min. ziehen lassen - die Melanzani mit Küchenpapier abtupfen.
Die Melanzanischeiben in beschichteter Pfanne mit etwas Öl beidseitig kurz abbraten und auf das Blech zurücklegen - mit frisch gemahlenem Pfeffer bestreuen, jede Melanzanischeibe mit einem Vulcanoschinkenblatt und 2-3 Basilikumblättern belegen, eng einrollen und bei Bedarf mit Zahnstochern fixieren.

Wash the aubergines, cut lengthways in slices approx. 5 mm thick, lay them on a baking tray scattered with salt and allow to stand for 30 min. – pat the aubergines dry with kitchen paper.
Briefly fry the aubergine slices on both sides in a little oil in a coated pan and place back on the tray – sprinkle with freshly ground pepper, top each aubergine slice with a slice of Vulcano ham and 2-3 basil leaves, roll up tight and secure with toothpicks if necessary.
