Das Projekt Algaefood verwendet bei seiner Lebensmittelproduktion junge, aus Aquakultur stammende Nordsee-Makroalgen, die von einer Sylter Algenfarm bezogen werden.
Die kontrollierte ökologische Kultivierung beeinflusst den Mineralstoffgehalt, den Gehalt sekundärer Pflanzenstoffe sowie die Schwermetall-Konzentration der Algen positiv.
Die Algen werden vom ttz Bremerhaven und der Langenhorner Meierei mittels speziell entwickelter Zerkleinerungsverfahren und Trocknungstechnologien wie der Luft-, Gefrier- und Wirbelschichttrocknung aufbereitet und in Quark- und (Frisch-)Käseprodukten weiterverarbeitet.
