Um die nachhaltige Pachtfähigkeit der einzelnen Betriebe zu ermitteln, wurden von der HOTOUR im ersten Schritt - in Zusammenarbeit mit der Buchhaltung des Kunden - die bisherigen Umsätze und Kosten in ein für die Hotellerie übliches Abrechnungsschema übertragen und anschließend mit branchenüblichen Benchmarks verglichen.
Im Anschluss wurde von der HOTOUR das betriebswirtschaftliche Gerüst eines Musterpachtvertrags erarbeitet, welches alle wesentlichen und notwendigen Vertragsbestandteile auflistete, ihre Funktion erläuterte und branchenübliche Regelungen nannte.
