Die Spaghetti kochen und den durchwachsenen Speck ( bevorzugt Pancetta oder Guanciale ) in feine Streifen schneiden und mit ein wenig Olivenöl oder Butter sanft ausbraten.
Den Käse ( Parmesan oder Pecorino romano, gern auch gemischt ) reiben und mit Ei verschlagen ( pro Person etwa eine halbe Tasse Käse und ein Ei ).
